"-o default" is useful if you don't want to replace any of the inner columns, only to add columns to the front or back of the existing output.

Why would a new magic output format token be preferable to simply documenting the current output format in the man page?  Whether you're talking about the -o {+,-}Field or the -o default or the -o all option
