update:  this worked to get the icons for the applications into the menu.

it didn't change the icons for files.

having found some docs on developer.sun.com (http://developers.sun.com/solaris/articles/integrating_gnome.html),
 i created a directory:
/usr/share/pixmaps/document-icons

and symlinked the openoffice* files into that directory, and ran update-desktop-database again

getting a bit lost now.  :/  i'm hoping this is simple for someone :P
