I do this from time to time and haven't noticed any significant  
issues, certainly not of the kind that used to be around in the GNOME  
2.0 days where you could end up with your desktop not showing up at  
all.  However, you're still quite likely to encounter things like  
layout annoyances, and have to deal with things like panel applets  
that are in one version but not the other etc.
