I'm not sure I follow your question, but I think it is this:

You are currently running snv_107 and wish to update.
The latest available is snv_111, but you cannot update to it (due to 
known bugs).
So, you want to update to a release which is not the current latest, but 
snv_109.

I don't believe there is a way of doing this currently. The "pkg 
image-create" command specifically updates to the latest available, and 
has no selection option to specify what to install. Personally, I would 
like to see this too, so I think it's worth logging an RFE for it if one 
doesn't already exist.
