Hi Teresa.  There are many options which depend on your student's ages. 
Obviously things like vim and emacs are long-term tools, but you can
certainly look into Nvu and Bluefish, jEdit, and just plain gedit.  Open
Office is rather unsuited because it won't expose the nitty gritty
detail by default like a text-editor, as OO.o is rather a word
processor.  There are other tools you may want to teach about, such as
filters and syntax formatters.  Tools such as aspell, indent, astyle
come to mind with that area.  There are also Firefox extensions which
may help such as the Web Developer addon.
