Apart from the lectures already mentioned by above for technical talks, one
of the first demos/presentations could be about using Solaris for the day to
day tasks of a typical student.
1. Coding - C, C++, Java, Python, Perl, Assembly...
2. Accessing net - via wifi, ethernet
3. Reading up documents - pdf, rtf, html, ms_office docs, etc
4. Authoring documents
5. Web authoring
etc...

The above are to demonstrate that none of  the regular activities of the
students are disrupted. Additional cool stuff in OpenSolaris is to be talked
about to get people interested to explore more than what they are already
doing in other OS environments.

Subsequently there can be programs(talks/demos/hands-on etc) around specific
technical topics (to help understand the system better) AND those on the
lines of what Sivasubramanian has outlined (to help understand the larger
context).
